This pumpkin loaf with matcha cream cheese frosting is easy to make and bakery-worthy
As an Asian-American baker, I love using Asian ingredients to put a twist on American classics, and this pumpkin spice loaf is my new current favorite! Instead of cinnamon, I use Chinese five spice for a warmer, more layered flavor, then top it with a not-too-sweet matcha cream cheese frosting. The loaf comes together in one bowl, and it bakes up soft, moist, and a little dense in the best way. Just let it cool completely before frosting, or the frosting will slide right off. Not a cream cheese frosting fan? The loaf is just as good plain. It slices up easily for sharing too: I passed some to my neighbors, and my mother-in-law happily had a slice for breakfast with her coffee.
