This Fluffy Salted Egg Pancake Covered in Custard Is the Perfect Brunch Recipe

Have you heard about the viral Salted Egg Yolk Pancakes at Naks in Manhattan?! Reservations open a week out, and they're only available on weekend mornings, so getting a table (and the pancakes) feels SO difficult. I couldn’t get a reservation, so I just made my own version at home, which is delicious too!
This is a thick, fluffy, yeasted pancake inspired by Golden Diner’s pancake (more like a cake layer than a classic pancake), and to make it similar to Naks, I topped the pancakes with a bright orange, zesty butter and a silky, lightly sweet salted egg yolk custard cream. The cream top is inspired by the filling from those egg custard buns but pourable!
It takes some time to proof the pancake batter and patience to cook (low & slow heat) to prevent burning, so make sure you make this on a morning you aren't in a rush.
Tips: It’s a thick pancake, so use a low-heat and cover the pan to help steam-cook it. Careful not to burn it, so when the batter is bubbling but still wet and slightly set on the sides, time to flip like a traditional pancake.
