If you’re looking for an easy and almost foolproof treat to bake, one that is perfect as a midday snack, dessert, or even breakfast, I’ve got just the recipe for you. Let me present to you my super-easy one-bowl mochi muffins!
Making the batter for these buttery, gluten-free mochi muffins is quite easy if you have access to a blender. If you don’t, you can hand-mix the batter with a whisk and rubber spatula. The hardest part of this recipe is waiting for the muffins to bake, which takes about 45 minutes. Then, out of the oven come mochi muffins with that signature chewy, bouncy texture that makes mochi-based treats, such as Hawai'i’s butter mochi and Japanese dango, so comforting and satisfying.
If you love chewier treats, let the mochi cure for a few hours or overnight. The next day, these mochi muffins get even chewier. If you like them with a crispy exterior, you can reheat them in a toaster oven or oven for a few minutes.
So, bake these for yourself, share them with friends, or bring them to a potluck and watch them disappear. Chewy mochi muffins for all!

PS: A few years ago, mochi muffins were a little controversial. A bakery tried to trademark the term “mochi muffin” and sent cease-and-desist letters to smaller bakeries and bloggers who used the phrase “mochi muffins.” While I didn’t get one of the letters, I remember fearing I would since I had written a few mochi muffin recipes. Many Asian and POC bakers felt unsettled. Mochi-based treats have existed across cultures and generations long before they became trendy, and treating a commonly used, descriptive name as proprietary raised real questions about ownership, power, and who gets to define food culture. If the bakery had succeeded in securing “mochi muffins” as their trademark, then perhaps someone else would be able to secure food terms like “tanghulu,” “dango,” or even “banana bread.”
Just a little food for thought. I’m also super proud of my group, Subtle Asian Baking, for bringing this controversy to light and to the media. Eventually, the bakery dropped the trademark and today, we are all free to share mochi muffin recipes and sell our mochi muffins!

- Melt the butter in a covered microwave-safe bowl. You can overheat the butter in the microwave until it turns into "brown butter." Let it cool down a little before adding it to the batter.
