The 4-ingredient cookies I can’t stop making

Are you a fan of Trader Joe’s Ube Mochi Pancake & Waffle Mix like I am? I love how coconutty it smells and how it bakes up into treats with the most beautiful lavender hue. Does it have the absolute best ube flavor out there? No, but I do adore that the mix is naturally vegan and gluten-free.
I like to think of this mix as my baking “paint.” And when a friend asked if I’d ever tried making cookies with it, I had a true Eureka! moment. (Thank you, Jen Lee, for sparking the idea!)
What makes them so special? The dough bakes into crinkled tops dusted with snowy layers of confectioners’ sugar. The inside is chewy and mochi-like, with a gentle coconut aroma and a subtle hint of ube. These are the perfect cookies to pair with coffee and tea. They’re sweet, mind you, but you’ll keep reaching for them! (See note below for a tip on how to temper some of the sweetness.)

- For more flavor, you can add a little ube extract or a tablespoon of ube halaya to mix into the dough.
- You can add a little oil to the dough as well, but these cookies aren't very sticky.
- For more variation, mix in shredded coconut or sesame seeds.
- For more flavor, mix in 1 tablespoon miso to quell some of the sweetness as well.
