For many years, starting in 2016, I practiced intermittent fasting and regularly skipped breakfast. While that helped me maintain my weight, I began to notice I wasn’t as fit or energized as I wanted to be. By midday, I often felt tired and very hungry. If I didn’t eat my first meal on time, I’d get hangry. So recently, I decided to become a breakfast eater again.
This is a significant change for me. After nearly ten years of skipping breakfast, I’m saying goodbye to an old routine and welcoming a new one. In the process, I also realized I wasn’t meeting my daily protein goals and eating most of my protein too late in the day.
That’s where my delicious and easy fluffy matcha yogurt recipe comes in. It’s quick, satisfying, and packed with protein (about 20 grams if you add collagen powder!). It looks like matcha buttercream—thick, creamy, and whipped—but it’s made with simple, nourishing ingredients. Add your favorite toppings, which is the perfect way to start your day.
Plus, you can use this fluffy yogurt as a not-too-sweet buttercream to frost your cakes and cupcakes! It’ll go on smoothly and beautifully, and can even hold its shape if you pipe it!
Unlike some trendy whipped yogurts that use pudding powder (which often contains cornstarch) or baking powder for texture, this version gets its light, fluffy consistency simply from good stirring and the natural body of Greek yogurt. Cornstarch and baking powder are typically meant to be cooked because raw cornstarch can be hard to digest, and baking powder can taste bitter or metallic when not activated by heat. Adding peanut butter gives it richness, while optional collagen and marshmallow root powder help create a thick, velvety, almost whipped texture. Marshmallow root, traditionally known for its soothing properties, adds a gentle binding quality that enhances creaminess without weighing it down.
