Before Karen met her husband, she had never had a dragon fruit. The brightly pink fruit perplexed her at first, then mesmerized and inspired her! She had to do something with the juicy, vibrant flesh, and soon, this beautiful flower fruit tart was born. How To Store
Due to the dairy-based filling (custard) and fresh fruit, a dragon fruit tart must be stored in the refrigerator.
Short-Term Storage (Up to 2-3 Days)
Chill Uncovered (Initial Set): First, let the tart set in the fridge for about an hour uncovered. This allows the filling to firm up.
Protect the Topping: The dragon fruit slices are the most delicate part.
Best Method If You Don’t Have a Tall Container: Carefully place toothpicks around the tart to create a "tent" and loosely cover it with plastic wrap, ensuring the wrap does not touch the fruit.
Alternative: Invert a large bowl or use a dedicated cake carrier to create a protective dome over the entire tart.
Refrigerate: Store it on a flat shelf in the refrigerator.
